Tatarstan is working on a project for a centre of excellence devoted to Tatar national cuisine. It will not only train professionals for the republic’s catering sector, but also study new interpretations of traditional dishes. Tatar-Inform was informed by Sergey Ivanov, Chair of the Tatarstan State Tourism Committee.
“This initiative is still at the idea stage”, he explained. “The task is to develop a clear structure for the project. It will not only train staff for the catering sector, but also seek new ways of using local produce to create new dishes. This will help develop and extend Tatar gastronomy”.
The centre’s ultimate aim is to establish Kazan as a leading centre of gastronomy, not only in Russia but worldwide.
